Mango kaesari/ Mambazha kesari...

I prepared mango kesari last week for our wedding anniversary..... my kid just loved it.... It is mouthwatering  dessert for any occasions....since mangoes are abundant in this season...

INGREDIENTS:

Rava/sooji- 1cup
Water- 1.5 cups
Sugar- 3/4cup
Cardamom powder-1/4tsp
Mango puree- 1/2cup
Ghee- 6tsp
Cashews-10
Raisins- 10
Yellow food color- pinch

METHOD:

  • For mango puree, peel off the skin & squeeze the pulp & keep it aside..
  • Heat 6tsp of ghee, fry cashews & raisins....keep it aside...
  • Heat the pan, add 1tsp of oil & roast the rava in low flame until nice aroma comes...transfer it to plate & keep it aside..
  • Then add 1.5 cups of water & pinch of food color into it..
  • When it starts boiling add the mango puree & mix well...cook for 2mins..
  • Add the roasted rava & stir contionously...
  • Now add sugar & keep stirring..(be careful not to form lumps)
  • Finally add the roasted cashews & raisins & cardamom powder....mix well....
  • Grease the plate with 1tsp of ghee & spread the mixture,  allowed to cool & later cut into small pieces...
  • Yummy mango kesari is ready.....!!!!!!
