Banana Almond Loaf cake(oven baking)

Banana Almond cake is the perfect Tea-time snack... I have tried some Cakes & posted already.. But, It is Utterly delicious because of its natural flavor of the fruit.. It is healthy food for kids... :) It has a good moist, almost gooey texture & intense banana flavor... Especially Crushed Almond adds special taste & I found myself  really loving this cake....

 I suggest, Light brown sugar to bake a loaf cake, because its suits the perfect taste to it than the white casting sugar... Ripe banana gives nice aroma & taste to it, just mashed it( do not cut the banana)..

Preparation Time- 20mins               Baking time- 30-40 mins

INGREDIENTS:

Brown sugar(Granulated)- 3/4 cup
All purpose flour/ Self- Rasing flour- 1 cup
Eggs- 3 (separate white & yolks)
Unsalted Butter- 100gms
Ripe banana- 1(mashed)
Soda Bi-carbonate- pinch
Artificial banana flavor essence- 1/4 tsp
Coarsely ground almond- 2tsp
Raisins- 15

METHOD:

  • Take a bowl, add mashed banana & egg WHITE into it... Beat well for 2 mins till soft peaks form... keep it aside...
  • In a separate large mixing bowl, add egg yolks, butter & mashed banana... Beat well for 2 mins till light & fluffy...
  • Now add in flour, Bicarbonate of soda & Artificial banana flavor into it....
  • It cannot Combine with the above ingredients, so add the beaten sugar paste into it.. beat till it becomes fluffy...
  • Then add some raisins & coarsely ground almond into it... mix well...
  • Preheat oven to 180 deg C for 10 mins...
  • Grease a pan with little butter & Dust it with flour.. pour the batter into a pan... sprinkle some grated almonds over it...
  • Place it on oven & bake for 30-40 mins at 180 deg C... or till well baked....
  • Insert a tooth-pick, when it comes out clean... it is well baked... remove from the oven & allowed to cool down completely.... & cut them into slices..
  • Delicious Banana almond cake is ready to have with milk/ tea/ coffee....

NOTE- If you want can add casting sugar(white), but the colour may changes.... You can try without eggs too....

Black Forest Cake

Black forest cake is very easy & elegant to prepare at home..... Usually friends & family rave black forest for parties. ..kids too love the taste...its so soft & spongy cake.... Actually I prepared for my hubby's b'day...😊😊


Ingredients:

For chocolate sponge:

All purpose flour/ Maida-  1cup
Unsweetened cocoa powder- 1/2cup
Sugar- 3/4cup
Milk- 3/4cup
Eggs- 3
Cooking oil- 1/4cup
Baking powder- 1tsp
Baking soda-1/2tsp

For Whipping Cream:

Heavy whipping cream- 1cup
Icing sugar- 1/4cup
Vanilla essence- 1tsp

For garnishing:

Chocolate shavings/bits
Color balls
Red cherries  

        Method for chocolate sponge:

  • First combine the dry ingredients,  maida with cocoa powder, baking soda & powder....Mix well...
  • Take a separate bowl, add sugar....3eggs....milk & oil  into it....mix well until sugar dissolves..
  • Beat well.....till the mixture dissolves..
  • Now mix the dry ingredients into wet ingredients.......mix well.....
  • Grease the cake tray with oil & dust with little amount of flour..
  • Preheat the oven at 150 deg C....
  • Pour the cake batter into tray & bake for 30mins......insert toothpick & check the stick come out clean....

  • After cake is baked, remove it on to cooling rack...       

    Method for Whipping cream:

    •  Take a mixing bowl...add whipping cream, icing sugar & vanilla essence...
    • Beat until cream gets thicken..(using handmixer)

      Cake Assembling:

      • After the cake cools down....remove the top crust...
      • Then cut the chocolate cake into 2 layers...
      • Apply a layer of whipping cream & spread i evenly...
      • Now place another chocolate cake & spread one more layer of whipping cream....and apply all over the cake....
      • Put the chocolate shavings on the top of cake & Garnish with cherries...

Choclate Muffins

Choclates are loved by almost all...especially kids... it is very easy recipe for beginners in baking... Ofcourse, A delicious treat for kids...

Ingredients:

Maida/ All purpose flour/ Self-raising flour-3/4cup
Powdered sugar- 1/2cup
Milk/water- 1/4cup
Cocoa powder- 3tsp
Egg- 1
Baking powder- 1tsp
Baking soda- 1/4tsp
Oil- 1/4cup
Vanilla essence- 1tsp

Method:

  • Preheat oven to 180deg C...
  • Meanwhile, in a mixing bowl add egg, vanilla essence & sugar.....mix well..
  • Add in oil & beat well....then add cocoa powder & mix well...

  • Pour milk, baking powder, baking soda & mix till combined....
  • Next add the flour & mix well....
  • Spoon the batter to muffin liners in the baking tray....fill 3/4th to the cup....

  • Bake for 20mins or until tooth pick inserted comes out clean.....
  • Cool down the muffins in a wire rack & enjoy the muffins....
  • Choclatey muffins looks yummmmmmmmyyy....!!!!!

Blueberry cupcakes Recipe..

Its perfect recipe for kids....

Ingredients:

All purpose flour- 1cup
Baking powder- 1tsp
Sugar- 3/4cup
Cake flour-1cup
Unsalted butter- 1/4cup
Egg- 1
Milk- 1/4cup
Vanilla extract- 1/2 tsp
Fresh blueberries- 1/2cup( with 2tsp of flour)
Salt- pinch

Method:

  • Preheat oven to 200 degrees....
  • Meanwhile take a bowl combine flours, sugar, baking powder & salt...mix well...
  • Add butter, egg, milk & vanilla extract & mix well......batter until ingredients are thoroughly combined, do not over beat...
  • Now gently toss the blueberries with 2tsp of flour in the batter...
  • Line cupcake pan with paper cups & divide the batter using a scoop & fill about 2/3 in a paper liners..   Sprinkle some raisins on the top...
  • Bake, for about 20mins....insert toothpick into the middle of cake comes out with crumbs, not wet batter....transfer to a wire rack  to cool completely....

  • Repeat the process with remaining batter....
  • Yummy blueberry cup cakes are ready..!!!!!!!  
  • NOTE: The batter should be thick & not runny & too thick like dough.....
