VEG Burger(Indian style)

Burger is a favourite recipe of kids & adults too... When I came to Singapore, its hard to find Indian style of burger, especially veg burger... So I have prepared veg patties at home of our favourite veggies & dressing..

All kids will definitely love this recipe.. it is good evening snack for kids & adults.. It is low in calories.. You can choose any kind of veggies of your choice & sauce.. Here I just shallow fry the patties instead of deep frying it... Really it is delicious treat to all... Check it out!!!!!

Preparation time- 15 mins           Cooking time- 15mins       Dressing time-5mins

INGREDIENTS:

FOR PATTIES:

Potato- 1(boiled & mashed)
White channa dal- 1 handful (Boiled & mashed)
Chopped carrot- 5-6 tsp (1/4 carrot)
Chopped beans- 5-6 tsp( 6 num)
Chopped cabbage- 1 handful
Chopped capsicum- 1/4 (5-6 tsp)
Spring onions- 2tsp (chopped)
Ginger-garlic paste- 1tsp
Onion- 1 (chopped)
Cumin powder- 1/2tsp
Garam masala- 1/2 tsp
Chilli powder- 1/2 tsp to 1 tsp
Coriander powder- 1/2tsp
Salt- as needed
BREAD CRUMBS- 1/4 cup
OIL- for shallow fry

FOR ASSEMBLING BURGER:

Burger buns- 4
Butter- 2 tsp
Sliced tomato- 5 pieces
Sliced cucumber- 8 pieces
Lettuce-  for garnishing
Tomato sauce- 6-8 tsp
Mayonnaise- 6-8 tsp

METHOD:

  • First cut all the veggies finely & keep it aside...
  • Take a mixing bowl, add all the veggies which is mentioned above & add the masala powders, salt, bread crumbs... mix well & make dough consistency..
  • Now take a small portion & flatten like medium sized patties... repeat the same process & make 4- 5 patties..
  • Heat oil in a pan, shallow fry the patties..turn to cook on both sides, switch off the flame when it becomes golden brown color...
  • Cut the burger into two halves & apply some butter toast slightly on both sides.. keep it aside..
  • Now make the ingredients ready for assembling burger...
  • First take the bottom part of bun & apply MAYONNAISE , place 1 leaf of LETTUCE , then keep the fried patty over it... then place sliced cucumber & tomato.. Then, apply 1 tsp of TOMATO SAUCE on the upper part of bun & just covered it.. Insert 1 toothpick to avoid falling of veggies...
  • Repeat the process & assemble with the remaining buns...

  • Wowwww... yummy veg burger is ready to eat.. YUMMMMMY!!!!!

NOTE- If you want add slice of cheese while assembling... You can choose any kind of your favourite veggies & sauce...

Methi Paratha

Methi or Fenugreek leaves are very good for our  health, it is rich in calcium Vit C... It is commonly used in curry, dal....Especially paratha.... It is good for nursing mothers to increase milk production, Incducing child birth & it is mainly helpful to reduce cholesterol level...


Actually it can be prepared in two ways... firstly, temper the cumin seeds, onion, chilli powder, methi leaves, roast well & mix it with dough... Another way is filled the methi in chapathi, make into ball & roll it... Here the recipe under 2nd way...check it out:

INGREDIENTS:

 Wheat flour- 2cups
Salt- as needed
Methi leaves- 1 bunch
Oil- 2tsp
Cumin seeds- 1tsp
Onion- 1(finely chopped)
Water- 1/4 cup(lukewarm)

METHOD:

  • Clean & wash the methi leaves thoroughly..
  • Heat oil in a pan & add cumin seeds, onion saute till golden brown appears.... then add methi leaves & saute for 3-5mins.... it gets ready, switch off the flame & allowed to cool down....keep it aside....
  • Take a broad bowl, add 2 cups of wheat flour/ Atta with 3tsp of oil & salt...mix well.... add few amount of water & make fine dough....knead & make into small balls...cover & rest for half an hour...
  • Take a small ball & roll into chapathi, now place little amount of methi mixture & close the edges..again roll into small circle by using rolling pin......
  • Heat pan/ dosa kal & put the paratha in it, add 1 or 2 tsp of oil, turn to cook on both sides.....repeat for the rest of the balls.....

Multigrain bread Upma..(insatnt)

Many kids hates to eat bread...usually they love to have bread only with jam... But artificial jam is unhealthy to their body... Even my kid JINJU loves to have with jam/ Nuttella... And he filters tomato, onion, curry leaves from his food... Sometimes i feel bad to feed him.. So i decided to give some healthy snack to him... This upma is rich in minerals... It is just instant version... If you want can add some veggies & cook.... It is good snack/ Breakfast for kids...especially Toddlers....

INGREDIENTS:

Multigrain bread slices- 5-7
Onion- 1
Tomato-1
Curry leaves- 1 spring
Chilli powder- 1/2tsp
Salt- to taste

FOR TEMPERING: 

Oil- 1tsp
Mustard seeds- 1tsp
Channa dal- 1tsp
Urad dal- 1tsp 

METHOD: 

  • First remove the sides of the bread slices & chop them into cubes...
  • Heat oil in a pan & add the ingredients mentioned under TEMPERING...
  • Then add chopped onions, saute for 3-4mins...
  • Now add tomatoes, chilli powder & salt into it....mix well.... add little amount of water & cook for 2mins...
  • Finally add bread pieces & mix well..... it gets smashed...garnish with coriander leaves(its optional)

NOTE- You can use white bread also instead of multi-grain bread..... 

TIP- If your kid loves egg, Before adding bread slices, crack 1 egg & do scrambling... later add the bread slices & mix well... It gives unique taste....

Egg Sandwich...

Egg Sandwich is all time favorite for kids....Egg salad is one of the favorite dish of my son... But he dont like sandwiches... So i've discovered the EGG SANDWICH with onions & capsicum...its something new that virtually every kid likes... its a perfect lunch box recipe too.... here the recipe, follow:


INGREDIENTS:

Wholemeal/ white bread- 1loaf
Onion- 1
Capsicum- 1/2
Eggs- 3
Tomato sauce- 2tsp
Pepper- 1tsp
Salt - to taste
Mayonnaise & ghee- for applying

METHOD:

  • Heat 2tsp of oil in a pan & add onions...saute till golden brown appears...
  • Add chopped capsicum & saute for 3mins..
  • Sprinkle some salt,pepper & tomato sauce...mix well...


  • Finally add BEATEN EGGS & mix well..cook for 2mins....turn off the flame...filling is ready..

    Stuffing ready...!!!!
  • Take a slice of bread & apply 1tsp of ghee & spread the above masala...
  • Close with another slice of bread is applied with mayonnaise...
  • Place it on a sandwich maker & cook for 3mins....then cut into two halves..
  • Woww.... tasty egg sandwiches are ready to eat..!!!

Masala Sandwich....

Many parents want their child to take healthy lunch box to school.... This is the time to encourage our child to enjoy family meals & try a wide range of foods, tastes, flavours & textures.... While sandwiches are the easiest lunch box option... No one can deny the benefits of vegetable sandwich..its rich in vitamins & minerals.. It is low fat sandwich...(without cheese).. It is light, easy & yummy recipe for evening snack too....


INGREDIENTS:

Whole meal/white bread- 1loaf
Onion- 1
Capsicum- 1/2
Tomato- 1
Cilantro(coriander)- 1handful
Tomato sauce- 1tsp
Chili paste- 1tsp
Salt- to taste
Mayonnaise & ghee-for spreading
Cumin seeds- 1tsp

Method:

  • Heat 2tsp of oil in a pan & add 1tsp of cumin seeds...
  • Add chopped onions, saute till goldn brown appears...
  • Add chopped tomato & mix well...
  • Add 1tsp of tomato sauce into it....
  • Add 1 tsp of Green chili paste into it & mix well....
  • Add chopped capsicum & mix well...
  • Sprinkle some salt & saute for 3mins...
  • Finally garnished with coriander leaves & stuffing is ready..allowed to cool down...
  • Take a slice of bread & apply some ghee & place the slice into toaster & spread the masala over it...& close with another slice of bread is already applied with mayonnaise...

  • Now place it on a sandwich maker, cook for 3mins & cut it into two halves..serve with lettuce..
  • Yummy masala sandwiches are ready to eat....!!!!!!!

NAAN Recipe....(In oven)

 I am verrrry happy because i finally made NAAN at home.....very delicious with simple ingredients....

Ingredients:

All purpose flour/Maida- 1cup
Lukewarm water- 1/2 CUP
Ghee- 2tsp
Oil- 2tsp
Sugar- 1tsp
Salt-to taste
Yogurt- 3tsp
Baking soda- pinch
Dry yeast- 1tsp
Melted butter - for brushing

Method:

  • First, add yeast in 1/2 cup of water & dissolve it...
  • Meanwhile take a bowl, add 1 cup of flour, salt, sugar, ghee, yogurt, baking soda & yeast water & make a fine dough....
  • Cover dough with towel/lid, wait for 3hours....dough becomes doubled...
  • Now preheat oven to 400 degrees.... divide dough into small balls...
  • Roll out on floured surfaces into big crcles.....place the rolled dough into baking tray or stone & cook for about 8mins until it turns lightly browned....flip & turn to cook on other side....

  • Take the naan out & brush with melted butter.....
