Mushroom Masala..

Mushroom masala recipe is quick & delicious, it goes well with Indian Flatbread( Naan, roti, Chapathi).. It tastes good along with capsicum & masalas... Mushrooms are all time favourite to my JINJU, so I planned to do some innovative dishes..I have tried some of Mushroom Recipes , Again it is super hit recipe, my hubby just loved it... You can serve with pulao also...


Preparation time-10mins        Cooking time-15mins

INGREDIENTS:

Button mushrooms- 250 gms
Cumin seeds- 1tsp
Onion- 1
Tomato- 1
Curry leaves- 1 spring
Ginger-garlic paste- 1tsp
Red chilli powder- 1tsp
Coriander powder- 1tsp
Turmeric powder-1/4 tsp
Green chilli- 1(OPTIONAL)
Capsicum- 1 small
Salt- to taste
Water- as needed
Coriander leaves- for garnishing

METHOD:

  • First clean & chop the needed ingredients...keep it aside..
  • Heat oil in a pan, add cumin seeds, curry leaves, onion..saute for 2-3mins... then add finely chopped tomatoes & mashed it... Later add ginger-garlic paste & mix well...you will get nice aroma when it sauted with onion & tomato... Then add chilli, coriander & turmeric powder.. mix thoroughly...
  • Sprinkle some salt & add cubed capsicum.. Then drop the chopped mushrooms & add sufficient water, cover & cook for 10-15mins.. 
  • Once the mushrooms are well-cooked, make into thick consistency.. (If you want, switch off at gravy consistency)
  • Delicious mushrooms masala is ready to serve with pulao, Indian Flatbread(Naan, chapathi, roti)..

NOTE- You can add tomato puree instead of chopped tomatoes.. Garnish with chopped coriander..

Mushroom Gravy..

Mushrooms are very low in calories, especially BUTTON MUSHROOMS helps to boost our immune system....But i've used oyester mushrooms for this gravy... It goes well with roti, chapathi & ghee rice....


Ingredients:

Mushrooms- 200 gms
Onion- 1
Tomato puree-1/4cup
Curry leaves- 1 spring
Ginger-garlic paste- 1tsp
Chilli powder- 1tsp
Turmeric powder-1/4tsp
Coriander powder- 1tsp
Garam masala-1/4tsp
Coconut paste- 1/4cup
Coriander leaves- for garnishing

Method:

  • Heat oil in a pan & add chopped onion & curry leaves...Saute till golden brown..
  • Add in 1tsp of Ginger-garlic paste...
  • Add tomato puree & saute for 2mins...
  • Next add chilli, turmeric, coriander & garam masala into it....mix well...
  • Sprinkle some salt & add required amount of water....
  • Add chopped mushrooms & mix well....cover & cook till the mushrooms are soft...


  • Finally add coconut paste, cook in low flame for about 6 to 8 mins...

  • Turn off the flame when gravy reaches the right consistency...
  • Garnish with coriander leaves..... This is awesome side dish for chapahi/Ghee rice....

Mushroom Biriyani

My kid's favourite dish...it is great one pot meal for lunch box...most delicious & tasty recipe.... 

Ingredients:

Basmathi/ordinary rice- 1 cup
Onion- 1.5(large)
Tomatoes- 2
Mushrooms- 300gms
Mint leaves- 1handful
Green chili- 4
Red chili powder- 1/2tsp
Coriander powder- 1tsp
Salt- to taste

For grinding:

Fennel seeds- 1tsp
Cinamon stick-1
Cardamon -3
Ginger- 1inch
Garlic- 3cloves
Mint leavs- 1handfull

For Seasoning:

Ghee/ cooking butter- 2tsp
Oil- 2tsp
Bay leaves- 2

Merhod:

  •  Wash & soak rice for 10mins....
  • Meanwhile grind the ingredients mentioned under grinding into fine paste....
  • Heat a cooker with oil & ghee, add bay leaves, onion, mint leaves....saute for 3mins...
  • Add tomatoes & saute well....now add chili & coriander powder...
  • Now add the ground paste & saute well.....
  • Add sliced mushrooms & cook for 3mins...once the mushroom is soft & masala blended well.....add 2cups of water into it...
  • Add rice(i've used ordinary ponni rice) & close the lid...cook for 2-3whistles...
  • Mushroom biriyani is ready to serve with onion raiha... Enjoyyyyy..!!!!!
  • NOTE:   DO NOT WASH MUSHROOMS, USE DAMP CLOTH TO WIPE IT....BECAUSE IT BECOME SOGGY......
