Mutter Paneer Recipe(veg)

Mutter Paneer Masala is very popular North-Indian recipe is prepared with paneer & Green peas... It can be served with Paratha, Naan, chapathi & rice.. It goes well with also... Paneer is all time fav for me... So I used to prepare paneer recipes, it is more easy to prepare... try this!!!!


Preparation time- 10mins          Cooking time- 20mins

INGREDIENTS:

FOR GRINDING:

Onion- 2 (medium)
Tomato- 1(big)
Cashew nuts- 10
Garlic- 3 cloves

FOR MASALA:

Oil- 2tsp
Bay leaves- 2
Cinamon stick- 1/2 inch
Chili powder- 1tsp
Garam masala- 1/4 tsp
Cumin powder- 1/2 tsp
Turmeric powder- 1/4tsp
Ginger-garlic paste- 1tsp
Dry Kasuri methi leaves- 1/2 tsp
Green peas- 1/4 cup
Paneer cubes- 1/4 cup
Salt- as needed

METHOD:

  • Heat oil in a pan, fry cashews, onions, garlic & tomatoes.. saute for 3-4 mins....
  • Allowed to cool down, transfer into blender & grind into fine paste.. keep it aside...
  • With a same pan, add 2tsp of oil & add bay leaves, cinnamon stick, then add the ground paste into it....
  • Add in kasuri methi(crushed) & ginger-garlic paste into it... stir well....
  • Now add the masala powders as mentioned above & sprinkle some salt.... at this note, add fresh green peas & bring it to boil for 4-5 mins...
  • Then add the paneer cubes into the gravy & boil for 3 mins... Garnish with coraiander leaves...
  • Delicious Mutter paneer is ready to serve with Chapathi, paratha & rice....

Babycorn Paneer lollipop

Paneer is my all time favourite....I want to try something new with paneer, so i tried with baby corn as well as potato..... It is very crispy on outside & crunchy inside... It goes well with tea/coffee... Best evening snack for kids... Try this lollipop....


INGREDIENTS FOR DOUGH:

Paneer- 7-9 cubes
Boiled potato- 2
Green chili-2(optional)
Ginger-garlic paste- 1tsp
Corn flour- 1tsp
Chilli powder- 1tsp
Coriander powder- 1tsp
Salt- to taste  

INGREDIENTS FOR BINDING:

Maida- 1tsp
Cornflour- 1tsp
Bread crumbs- 6tsp

BABY CORN- 6-8(For lollipop)

METHOD:

  • First boil the potatoes & grate the paneer....
  • Once its steamed, mash the potatoes & paneer.....
  • Add the chilli & coriander powder, salt, ginger-garlic paste, corn flour & mashed potatos & paneer.....mix well... knead into thick dough....

  • Now make the dough into small balls for lollipop....(it should be smooth dough)
  • Press the paneer ball lightly between your palms to secure firmly on the baby corn....lollipop is ready....do the rest of the balls with same procedure....


  • Prepare the flour for binding...mix maida & corn flour in little amount of water & mix well...
  • Now dip the lollipop in flour & roll into bread crumbs....


  • Heat sufficient oil in a pan & drop the lollipops into it.....deep fry it for 3mins...turn over to cook on both sides....

  • Crispy paneer lollipops are ready..... it goes well with TOMATO SAUCE/ green chutney.....

Rasagulla(sweet)

Rasagullas are prepared by paneer balls soaked in sugar syrup... actually i prepared this paneer in pressure cooker...it can be done by ordinary pan with lid... but it takes time to cook... This was my cousin sister's favourite sweet, first time i tasted at her home... i wondered the texture of it... it is so soft & sugary syrup... recently i had this rasagulla in sweet stall.... i took a challenge & made this at home... my hubby appreciated me...it came out well as such as sweet stall... try this recipe...


INGREDIENTS FOR PANEER:

Ingredients for syrup:

Sugar- 2cups
Water-3 cups
Cardamom powder- 1pinch

METHOD:

  • Take the homemade panner(http://www.pappuskitchen.blogspot.sg/2014/07/homemade-paneer.html?m=1  ) & knead gently to make soft & smooth dough...

  • Then make equal sized small balls.....(size may vary, it depends)
  • Meanwhile take water, sugar & cardamom powder in a cooker & boil it...

  • When the sugar completely dissolved in water & syrup starts boiling & add the balls gently...(one by one)

  • Cover the lid & cook for 2-3whistles....
  • When pressure gets released, open the lid & you can see the rasagullas are doubled in size....
  • Cool down & refrigerate it....
  • Juicy rasagullas are ready to eat... yum.. yum..!!!!!!    

Homemade Paneer

Paneer is a homemade Indian cheese cottage... It can be used for making desserts, appetizers & main course dishes.... It is made by curdling heated milk with lime juice/ vineger...

INGREDIENTS:

Milk- 1litre
Lemon juice- 5-8 tsp

METHOD:

  • Boil the milk in a pan..
  • When the milk comes to boil, add the lemon juice & stir the milk gently...
  • You can see the curd will start separating from the whey.... now turn off the flame...
  • Once the whey separated, drain the whey by using clean cloth...


  • Using strainer, rinse under the running water...repeat the process till the soreness goes off..
  • Squeeze well to drain the remaining water...
  • Open the cloth & refridgerate it..    
  • NOTE: Knead the paneer like chapathi dough... you won't use it immedietely, freeze it for later use...u may cut into small cubes & refrigerate it..

PANEER BUTTER MASALA...(Restaurant style)

Its a popular Indian dish, more creamy & tasty....it goes well with naan bread, roti & chapathi..

Cooking Time- 15 mins 

Ingredients:

Cubed paneer- 1cup
Ground onion- 1
Tomato puree- 1cup
Ginger-garlic paste-1tsp
Turmeric powder- 1/4tsp
Garam masala- 1/2tsp
Chili powder- 1tsp
Coriander powder- 1/2tsp
Thick cream- 4tsp

For seasoning:

Cumin seeds- 1tsp
Bay leaves-2
Cloves- 2

Method:

  •   Heat 2tsp of oil in a pan & add cumin seeds,bay leaf ,cloves & ginger-garlic paste...saute for 1min..
  • Add the fine ground onion & tomato puree...saute for 3mins...
  • Then add chili,coriander & turmeric powder...garam masala, sprinkle some salt ino it....saute for 4mins...add water accordingly..
  • Add paneer & cook at low medium flame....cover for 3mins..
  • Add thick cream & mix well....(if u want thicker gravy, add more cream)

PALAK PANEER..

Ingredients:

Palak leaves- 2bunches
cumin seeds-1tsp
ginger garlic paste-1tsp
Chopped onions- 1(big)
Chopped tomatoes-2(medium)
paneer(indian cottage cheese)- 100gms (cubed)
chili powder-1tsp
Garam masala-1/2tsp
Fresh cream-1/4cup
Salt-to taste
Sugar- 1/4 tsp(opttional)

Method:

  • Wash palak leaves(spinach) & remove stems
  • Heat oil in the pan & add cumin seeds, chopped onions,tomatos, ginger-garlic paste & saute for 3 to 5mins..
  • Add chilli powder & garam masala into it..
  • Saute for sometime & add palak leaves & sprinkle some salt into it..  (add 1/4tsp of sugar)
  • Transferred it to blender & grind into fine paste...
  • Add 1tsp of oil & pour the above paste & boil for few mins..
  • Nextly, add cubed paneer & add some water... gravy should be little thick in consistency..
  • Finally add fresh cream & mix well... turn off the flame..
  • Palak paneer is ready to serve....it goes well with roti/chapathi...

      1. Sugar is added to retain its green colourKeep the paneer cubes in hot water before starts preparing..
