Kulfi (recipe with khoya)

Kulfi is basically a frozen Indian dessert... It can be served in the hot summer or after meal.... I still remember the kulfi seller carrying a big Ice box with variety of kulfis inside it & selling kulfi door to door... Me & my sister is eagerly waiting for him with a couple of coins in hand... In the months of April & May, we would  always ask him to stop near our house & serve us daily...haha :)


Nowadays I couldn't find such kind of vender selling kulfis, really iam missing those days... Now kulfi is available at many restarunts in many different flavours... I just tried KULFI & other Ice cream recipes couple of times at home, it came out well...  It is easy to prepare & doesn't take lot of time... try this!!!!

Preparation time- 5mins          Cooking time- 15mins            Freezing time- 4-5 hrs

INGREDIENTS:

Milk- 1/2 litre
Rice flour- 1 & 1/2 tsp
Khoya- 1/4 cup
Sugar- 1/4 cup
Nuts- 7 tsp(pist, almond & cashews)
Saffron- pinch

METHOD:

  • In a pan, heat milk on a low flame & reduce to thicken...
  • Dissolve the rice flour  in 3tsp of milk, saffron & khoya to the milk....(stir well to avoid lumps)
  • When it gets started thickening, add sugar to it & keep stirring...
  • Now add the crushed nuts into the milk...
  • After 4 or 5mins, when the milk has thickened, switch off the flame....
  • Allowed the kulfi mixture to cool down & pour into kulfi moulds / short glasses...
  • Now cover it with lids & refrigerate for about 4-5 hours....
  • Once it well freezed, take the kulfi moulds & keep it in bowl of water, to remove the kulfi from mould....
  • Delicious kulfi is ready... Serve immediately....

NOTE- You can add instead of condensed milk instead of khoya.....

Falooda Popsicle

Falooda popsicle is all time favorite recipe for me... During my childhood days I Love semiya kuchi ice.. Actually Iam not much confident while doing this, but the outcome was really awesome.. My little hero JINJU just loved it....


Already I posted FALOODA recipe.. I just tried the popsicle with the same milk by adding jelly, vermicelli & sabja seeds.... Definetely kids enjoy it... Nice rose flavor, jelly mix...it is absolutely yummmmy o yummmmy!!!!!

Preparation time- 20mins            Freezing time- 8hours

INGREDIENTS:

Boiled milk- 1 cup
Rose essenence- 1tsp
Sabja / basil seeds- 2tsp( soaked)
Vermicelli- 1handfull( boiled)
Sugar- 4tsp
Raisins- 10( optional)
Jelly mix- 3stp

METHOD:

  • First make the jelly as per the instructions in jelly mix packet & refrigerate it for 1hr..
  • Then add rose essence to boiled milk & add sugar, mix well until it dissolves to the milk..
  • Next add the vermicelli, sabja seeds & raisins to the milk... keep it aside..
  • Get ready with the ingredients & take the popsicle mould..  First add the jelly, then add vermicelli..
  • Now pour the mixture milk into mould & sprinkle some soaked sabja seeds into the mould & insert the stick inside...

  • Freeze it for about 8hours...
  • Then take the moulds & place it on a cup of water( to remove the popsicle out from the mould)
  • Serve immediately..... delicious...!!!!!!

CARAMEL Custard/ Caramel pudding(without egg)

Caramel custard is a very soft in texture, caramel on the top.... It can be prepared with/ without eggs... But i have prepared WITHOUT eggs... I have tried it by using oven, first time i tried without oven, just refrigerating for 4 hours...It came out verrrry well, my hubby appreciated me.. it very healthy & kid friendly recipe...



In India, it is made from cow's lactating milk & prepared in first 5days milk of cow that gave birth to calves... In tamil it known as " seempaal"..  Just steam the milk & eat...very tasty sweet...!!


It is tasty dessert with very few ingredients, check it out...

INGREDIENTS:

Whole milk- 2cups
Sugar- 4tsp
Milkmaid condensed milk- 3/4cup
Vanilla essence- 1tsp
Water- 5tsp 

METHOD:

  • Firstly to make caramel, melt sugar in a pan adding very little amount of water & boil well, slowly it turns golden brown color....once it turns thick consistency, switch off the flame... (note- melts till golden brown & switch off the flame otherwise it burn & gives bitter taste)
  • Now pour the caramel in mould & keep it aside...
  • Take a bowl, add milk & boiled it..... Once it completely boiled add condensed milk & stir well...Slowly it starts to thicken(slight)...At this note, add 1tsp of vanilla essence & stir well... Allowed to cool down...
  • Now transfer the milk into mould containing caramel.....refrigerate for4-5 hours....
  • Now place a plate on a mould & turn upside down slowly....
  • Wowww yummy caramel on the top, soft custard inside.....it is reallllyy yummmy....

FALOODA recipe

How many of you like Falooda??

Falooda is yummy & delicious dessert...it can be served after food... Tasty & simple recipe... Very healthy for kids & all....It is cold & containing many ingredients like jelly pieces, rose syrup with vermecelli, sabja seeds, nuts.. topping with vanilla flavored icecream... 


It is most popular in South Asian countries like India, Pakistan, Srilanka etc... It is delicious summer drink...Its kid- friendly recipe, try this & surprise ur kids....

INGREDIENTS:

Whole milk- 2cups
Rose essence- 1 tsp
Sabja/ Basil seeds- 2tsp
Vermicelli- 1handfull
Sugar- 3tsp
Elachi powder- pinch
Raisins/ Pista- 10( coarsely powdered)
Jelly mix- 3tsp
Vanilla icecream- 2 scoop 

METHOD: 

  • First heat water in a pan & add jelly mix...bring to boil for about 5-8mins.... Allowed to cool down, and transfer into ice tray/ Mould... Refrigerate for about 2hrs.....
  • Next soak the sajba seeds into water for about 30mins.... It becomes double in size...
  • Boil the vermicelli in water & keep it aside...
  • Meanwhile boil the milk.....once it is completely cooled , add rose essence/ syrup...sabja seeds into it...
  • Then add sugar, chopped nuts/ raisins( your choice) & mix well... Refrigerate the mixture for about 1hour....

FOR SERVING:

  • First ready with your ingredients, jelly cubes, chilled milk, vermicelli & sabja seeds....vanilla ice cream & tall. glass...
  • Take a tall glass, add jelly cubes(here i have used strawberry jelly), then add vermicelli & sabja seeds into it....
  • Now pour the chilled milk upto 3/4th of the glass....
  • Scoop the vanilla ice cream & finally add to the glass.....decorate with nuts/ color balls.....
  • Yummmmmy FALOODA is ready to serve.... 

NOTE: You can also chopped nuts, finely chopped fruits  for richness of the taste......

Custard powder Icecream

Actually iam not much confident while doing this recipe... But after blending the icecream repeatedly, it looks awesome....I love to lick the remaining icecream in the blender.....it tastes too good.... I was eagerly waited till it completely over... When i scoop the icecream, the flavour attracted me to eat.....wowwwww it melts in my mouth.... my kid jinju loved it...i remembered his smile with ice cream meesai...haha..:-)

It is very easy to prepare at home.....Its delicious treat for kids...!!!!!

INGREDIENTS:

Custard powder(vanilla flavour)- 3tsp
Boiled milk- 2cups
Sugar- 1/2cup  

METHOD:

  • First mix the custard powder in 1/4 cup of milk & keep it aside...
  • Now take the milk & add sugar into it....stir until it gets dissolves...
  • Add custard mix with the milk & stir gently till it gets thicken.....keep stirring in low flame...
  • Switch off the flame when it becomes thick consistency....
  • Allowed to cool down, pour into blender & grind well...
  • Take a aluminium/plastic bowl, pour the mixture into it & freeze i for 3hrs....(cover with plastic sheet)
  • Again take it out & blend it until smooth texture......then freeze it for about 4hrs....
  • Once it becomes hard, take out from the freezer & set aside for 5mins...then scoop out...
  • Serrve ice cream in a bowl....Yummmmmy ice cream ready...!!!
  • NOTE: If you have hand mixer, it is more easy to blend the ice cream.... You can use tuti fruti for garnishing.....
