Instant RAVA idli..

Rava idlis are a super fast alternative to traditional rice idlis.....its a instant recipe....no soaking/grinding....Nowadays there are many instant ready-made packets available in market...but nothing can be beat the taste of soft & fluffy home idlis....its slight change with the normal rice idlis. .. Try this..!!


INGREDIENTS:

White rava/ sooji- 2cups
Oil- 3tsp
Mustard & cumin seeds- 1tsp(each)
Channa daal- 1tsp
Urad daal- 1tsp
Red chili- 1
Cashew nuts- 8
Yogurt- 1cup
Curry leaves- 1spring
Green chili- 1
Cilantro/coriander leaves- 4(chopped)
Salt- to taste
Sliced tomatoes & cilantro- for garnishing..

METHOD: 

  • Heat oil in a pan & add mustard seeds to pop up..
  • Add jeera, channa daal & urad daal, red chili , curry leaves, cashews & mix well..
  • When it turns light brown, add in sooji/rava.....roast until get a nice aroma...
  • Transfer into another bowl & allowed it to cool down...
  • Meanwhile, in another bowl mix curry leaves, coriander leaves, green chili, salt & YOGURT mix well...
  • Now pour the yogurt mixture into cooled sooji & mix well....
  • Add some water &  keep mixing until there are no lumps visible....when the batter is ready, rest for atleast 15-20 mins....
  • Prepare idli steamer by pre-heating water to boil....then pour mixture into idli trays( before that decorate with the slice of tomato & cilantro & pour the batter)

  • Put the idli stand into steamer & cook for 15mins on a medium heat...
  • Remove the idlis from the trays by scooping them out with a spoon...
  • Serve hot with spicy tomato chutney...or sambar... (click here for chutney   )

ONION UTHAPPAM

Ingredients:

Dosa bater-1cup
Finely chopped onions-2 (med)
Grated carrot-1 cup
chopped curry leaves-3tsp
Chopped coriander leaves-3tsp    

Method:

  • Heat the dosa kal & spread batter into it(thick circle)
  • Drizzle chopped onions, curry & coriander leaves
  • Top up with grated carrots...add 2tsp of oil..
  • Turn it & allowed to cook on other side
  • Yummy uthappam is resdy to serve with onion & coconut chutney...

Multi-grain ADAI....

Adai is usually prepared for breakfast...it is rich in protein & iron... 

Ingredients for Batter:

Raw rice-1/2cup
Parboiled rice-1/2cup
Thoor  dhal-1/4cup
urad dhal-1/4cup
channa dhal-1/4cup
Moong dhal-1/4cup
Ginger- 1inch
Red chilies-6
Salt -to taste.. 

Ingredients to add into Batter:

Chopped onoins-3
Chopped curry leaves-1spring
Chopped coriander leaves
Drumstick leaves- 2hand full (optional)
Asafoetida- pinch..

Method:

  • Soak rice & dhal together for about 3 hrs...
  • First grind red chilies, ginger & salt into fine paste..
  • Grind the rice & dal coarsely & mix the paste into it..batter should not be thick..medium consistency...
  • Now add asafoetida, finely chopped onions, curry 7 corriander leaves..drumstick leaves to the batter... allow to fermentation for about 2 to 3 hrs...
  • Heat the pan & spread it like big circle(like dosa)... flip it over to another side & add 2tsp of oil..
  • Hot spicy adai is ready to serve with coconut chutney or avial or jaggery..
