Its perfect recipe for kids....
Ingredients:
All purpose flour- 1cup
Baking powder- 1tsp
Sugar- 3/4cup
Cake flour-1cup
Unsalted butter- 1/4cup
Egg- 1
Milk- 1/4cup
Vanilla extract- 1/2 tsp
Fresh blueberries- 1/2cup( with 2tsp of flour)
Salt- pinch
Method:
- Preheat oven to 200 degrees....
- Meanwhile take a bowl combine flours, sugar, baking powder & salt...mix well...
- Add butter, egg, milk & vanilla extract & mix well......batter until ingredients are thoroughly combined, do not over beat...
- Now gently toss the blueberries with 2tsp of flour in the batter...
- Line cupcake pan with paper cups & divide the batter using a scoop & fill about 2/3 in a paper liners.. Sprinkle some raisins on the top...
- Bake, for about 20mins....insert toothpick into the middle of cake comes out with crumbs, not wet batter....transfer to a wire rack to cool completely....
- Repeat the process with remaining batter....
- Yummy blueberry cup cakes are ready..!!!!!!!
NOTE: The batter should be thick & not runny & too thick like dough.....
