It is one of the most popular south Indian snack...I goes with pongal/ evening time snack with tea... our family favourite too....
Ingredients:
White urad dal- 1cup
Green chilies- 3
Ginger- 1inch
Chopped onions-2
Curry leaves- 2spring
Coriander- 1 handful
Mint leaves- 10(optional)
Salt- to taste
Method:
- Wash & soak urad dal for 1.5hrs..
- First grind the green chillies, ginger & salt...grind into fine paste...keep it aside...
- Then add soaked urad dal without water(either in blender/grinder)....usually i used to grind on grinder....sprinkle some water & dont add more water....
- Batter should be fluffy..thick & smooth....take a pinch of batter & blow air...it should be more fluffy.....
- Add chopped onions, curry leaves, coriander leaves,mint leaves & gren chili paste....mix well...
- Dip the fingers in water & shape the vadai..... take a medium sized batter in your hand & make a hole in the center...
- Heat oil in a pan & carefully drop the vadai into oil & flip it over to cook on both sides...fry till golden brown..
- Drain oil & enjoy hot crispy vadai.....
- Serve it with coconut chutney / sambar......
NOTE: To find out if your batter is ready, wet the fingers & take a ball of batter, it should not dissolve in water)
