KUZHI PANIYARAM...

  Kuzhi paniyaram is very traditional & authentic recipe of tamilnadu...

Ingredients for sweet paniyaram:

Parboiled(pulungal)rice- 2cups
Raw rice-2cups
Fenugreek seesds- 3tsp
Urad dhal (ulundhu)- 1/4cup
water
baking powder-pinch
Jaggery- 1/2 kg
ghee-5tsp
salt.. 

         Method for batter:  

  • Soak the fenugreek seeds, parboiled,raw rices & ulundhu for abou 3hrs.. 
  • First grind the seeds with sprinkle some water & add the 2 soaked rice & grind into smooth paste...
  • Transfer the batter into big bowl & add some salt & mix it well with hands..
  • Keep it for fermentation on overnight...     

    Preparation for sweet paniyaram... 

    • Take the required amount of paniyaram batter into a bowl... (it should be like idli batter consistency)
    • Take the grated jaggery & add 4tsp of water & melt it completely..
    • Add the above jaggery syrup into the batter & add a pinch of baking powder & stir well...

    • Heat the paniyaram pan & greased little amt of ghee in each mould & add the batter to mould..
    • Turn each & every paniyaram with the help of skewer or wooden stick to cook on oher sides...
    • Paniyaram is ready to serve hot...

      NOTE: Batter should be very thick because u add jaggery syrup it will be losen..

 Ingredients for karam:

Chopped onions-1 big
Chopped chili- 2
Curry leaves -1 spring(chopped)
Coriander leaves- 1spring(chopped)
Salt -to taste... 

For seasoning:

  1. Mustard seeds- 1tsp
  2. Chenna dhal -1tsp
  3. Split urad dhal -1tsp... 

Method:

  • Heat the pan & add 2tsp of oil, mustrad seeds, chenna dhal, urad dhal, curry leaves, onions, chilies & all saute well...
  • Mix the above mixure into batter...
  • Heat the paniyaram pan & grease the moulds with little amt of oil & pour batter in each moulds & cook on low flame...
  • Turn each paniyaram & cook it with uncovered for few mins...
  • When it turns golden brown, then flip it with skewer...
  • Now hot, spicy karam paniyaram is ready to serve with chutney & sambar...
